Cinnamon Bubble Buns

Cinnamon-Bubble-Buns-3-for-web-edit

Are you feeling neglected? I think my kitchenaid mixer is.  My blogging neglect had a good reason though…I promise. I kinda-sorta got the itch to redecorate my kitchen at the last minute.  My house has very little light (a constant headache in my photo taking world); add to the mix the dark colors that my walls were painted, and you get the idea – dark and gloomy. I wanted bright and cheery. I wanted wake-you-up-make-you-feel-good-put-a-sparkle-in–your-smile colors.

So I embarked on a journey.  A journey filled with numerous trips to the paint store, a selection of what I thought was the perfect color, and a realization that is was NOT the perfect color.

This led to another trip to the paint store, another paint color selection, and repainting the walls – again. Did I mention my husband had the patience of a saint? Smile

My kitchen walls are finally done, and I love the final color. Now we’re tackling the living room today.  Don’t worry – I picked up THREE paint sample jars to make sure we (when I say we, I really mean my husband) get the color right the first time.

To reward my husband for his patience and hard work, I made these Cinnamon Bubble Buns for him this morning. A miniature version of monkey bread, made in muffin tins.  They are delicious and just the right size. Smile

(Prep: 1 hour 45 min; Bake: 20 min; Yield: 12 buns)

For the dough:
  • 1 package active dry yeast (2 1/4 tsp)
  • 1/4 cup warm water
  • 3 tbsl unsalted butter, melted
  • 2/3 cup sour cream
  • 3 tbsp sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour, plus more for kneading
  • 1/2 tsp salt
  • 1/4 tsp baking soda
For the cinnamon-sugar coating:
  • 2/3 cup packed light brown sugar
  • 2 tsp cinnamon
  • 6 tbsp unsalted butter, melted
For the vanilla glaze:
  • 1 1/4 cups powdered sugar
  • 1 tbsp unsalted butter, melted
  • 1 tbsp milk
  • 1 tsp vanilla extract
1. In a large mixing bowl, sprinkled the yeast over the water and let it stand until bubbly, 5 to 10 minutes. Stir in the butter, sour cream, sugar, egg, and vanilla.

2. Beat in 2 cups of the flour, the salt, and the baking soda until combined.

3. Add the remaining 1/2 cup flour and continue mixing until a smooth, soft dough forms.

4. Turn the dough out onto a lightly flour surface (keep your mixing bowl handy) and knead it until smooth, about 3 minutes.  As you knead, add more flour if the dough is sticky, no more than 2 tbsp though. Place the dough back in the mixing bowl and cover with plastic wrap. Let the dough rise in a warm place until doubled in size, about 1 hour.

5. Lightly grease a 12-cup muffin pan, then flour the cups and tap out the excess.

6. In a small bowl, blend the sugar and cinnamon for the coating. Place the melted butter in a small dish and set aside.

7. Gently punch down the dough to deflate it. Form it into a long cylinder and divide it into 12 equal portions. Using kitchen scissors or a sharp knife, divide each of the 12 portions into 6 equal pieces, then roll each piece into a ball.

Cinnamon-Bubble-Buns-1-for-web-Edit  Cinnamon-Bubble-buns-6-for-web-edit

8. To make a bun, dip six of the balls in melted butter (be generous with the butter), then roll them in the cinnamon-sugar mixture. Arrange five of the balls in the bottom of a muffin cup. With your fingertip, make a small well and press the sixth ball in the center. Repeat with the remaining dough balls. Loosely cover the buns with plastic wrap and let them rise in a warm place until they’re puffy and double in size, about 40 minutes. Preheat oven to 350F.

9. Bake the buns on the center rack until golden, about 20-22 minutes. Transfer the pan to a wire rack placed over a sheet of waxed paper or aluminum foil to cool for about 5 minutes. Now tilt the pan and gently tap it on the counter to release the buns. If needed, you can use a knife to release them from the pan. Place the buns on the wire rack.

10. In a small bowl, combine the ingredients for the glaze and stir until smooth. If the glaze is too thick, you can thin it out by adding 1 tsp water at a time. Brush each bun with the glaze. Serve immediately or at room temperature.

You are so industrious! My kitchen needs painting too, but it's going to wait for summer when I have more time. You're so lucky- I love freshly painted walls! Those cinnamon bubble buns are the perfect way to thank your hubby. They look delish! :)

What a lovely idea...bubble roll in individual servings. The sour cream added to the dough must make these nice and tender. Congrats on your updated kitchen...what color did you choose?

Wow!, they look lovely!, I have to try those, with your permission of course and if I do, I´ll mention your name in my blog. Good luck with your painting, whenever I paint something I have the ability to make a mess of it, so I gave up long ago.

These buns look delicious. I may have to try to get over my aversion to sour cream and make these.

P.S. You remind me of a famous Brazilian singer named Ana Carolina. She has reddish hair, but for some reason, I think of her when I see your photo. :)

I made & posted about monkey bread muffins recently, but they don't look half as pretty as these! Wow! What pretty bubble buns! :)

Happy painting! :)

Linnea said...

How do you get them to stick together? I made them today and they were delicious, but as soon as I tried taking them out of the pan, they fell apart and now they're just little balls, yummy ones, but they don't look so pretty. How do you do it?

Kate said...

These are making my mouth watering as I am sitting at my desk at work - man o man - would love to have one of these at my desk right now. Thanks for posting!

They look delicious! I´ll definitely must do them.
thanks Amber for sharing.

Amber said...

Hi Linnea,
Hmmm, I'm not sure what your problem may be. You do need to be generous with the butter when dipping the dough balls, maybe that would help them stick together better:) Make sure the dough balls fit closly together in the pan too, and press them together a little if needed. I hope this helps. At least they tasted good for you though! :)

Linnea said...

I'll use more butter next time then :) Thank you!

My family will love these!! This is one of those weekend treats that we all look forward to during our busy days at school and work.
I SO get it with the paint!!! I'm not very good a putting the colors together or simply choosing one in general. We painted my daughter's room when she was little and she wanted bright pink. We didn't want to go too pink, so we didn't choose the brightest one. However!! After purchasing a couple of gallons, having my husband cut in the corners and get one wall painted, the pepto bismol pink on the walls was blinding. Back to the store for something softer. Luckily we hit it right that time. Can't wait to see pics of your new wall colors!
AND, btw... congrats on that fabulous top 9!

My mouth is watering. I love Cinnamon... It's probably my favorite spice. Great job!

in addition to giving one the excuse to say 'bubble buns,' these are awesome for many other reasons. most importantly, cinnamon is oh-so-prevalent and that's hard to beat! :)

This recipe reminded me why I love baking bread...working with yeast, rolling each "bun"...it's absolutely therapeutic & these Bubble Buns tasted delicious! I LOVE the cinnamon sugar goodness & being able to slowly nibble each section slowly to savor it!

These look amazing! I'm having company over on the weekend so I'm going to give these a try. Two quick questions - can the dough be made ahead of time and kept in the fridge until the morning of? And can I substitute instant yeast for the active dry yeast?

TIA :)

Amber said...

Hi Vicky! I haven't tried making these the night before, but I'm sure it would work like any other overnight roll method. I would try making them up to the point they are assembled in the muffin pan. Then put them (covered) in the fridge overnight. Pull them out the next morning and let come to room temperature (or mostly), then bake as normal. Instant yeast has different rising times, so I couldn't say how this would affect the recipe. It would be trial and error :) Hope this helps!

These look soo yummy! Do you think it would work to bake as normal but then freeze them for those mornings when we need to grab something quick?

Amber said...

Hi Kate! I haven't tried freezing these. But I don't see why you couldn't. They may loose a little moisture, but they should still be yummy. :)

Thanks for the great recipe. I just made them and my husband and I had some with coffee, very delicious and such a light dough.

Made these today, except in the traditional cinnamon roll way. The dough was so silky and the rolls were the fluffiest I have ever made. I much prefer them without glaze but they are yum. I can't wait to try other variations besides cinnamon. Thanks for the recipe.
