Chunky Twix Cookies
December 9, 2010
My brain train quickly came to a halt at the glorious Twix. Why not chop up Twix bars, throw them in, and see what happens? Admittedly, it's sorta like putting cookies INTO cookies, but who says you can't do that?
The result was completely awesome, with the development of my husband's new FAVORITE cookie. After picking up one of the freshly baked wonders, still warm from the oven, he took a tentative bite, not expecting anything too wondrous. Then the next words from his mouth were, "These are freakin' AWESOME!"
Coming from my husband, who's usual response to a dish he likes is an abbreviated grunt and maybe a nod of his head, this was high praise indeed. For the dough base I adapted my favorite chocolate chip recipe from Baking Illustrated. These cookies are great out of the oven and still taste good the next day. They can be baked immediately, or if you allow the dough to rest overnight in the refrigerator they develop an even deeper flavor. They are dense, thick and chewy, with a little crispness on the edges. Yum!
Chunky Twix Cookies
Yield: 24 cookies Printable Recipe
2 cups plus 2 tbsp all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
12 tbsp. unsalted butter, melted and cooled until warm
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp. vanilla extract
2 cups coarsely chopped Twix bars
Preheat oven 325°. Coarsely chop the Twix bars (about 1/4-inch chunks). I like to cut each bar in half lengthwise, and then make several cuts width ways to make even blocks. In a medium bowl, whisk together the flour, baking soda and salt; set aside. In the bowl of an electric mixer, mix butter and sugars until thoroughly combined. Beat in egg, yolk, and vanilla until combined. Add dry ingredients to the sugar mixture and beat at low-speed just until combined. Gently stir in the Twix chunks.
Roll 1/4 cup of dough into a ball, place formed dough onto cookie sheet, leaving ample room between each ball. Bake until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy (about 15-18 minutes). Do not overbake.
Allow the cookies to cool completely on the baking sheet. Since the caramel from the Twix can make the cookies stick a little, I use an offset spatula to slide under the cookies without breaking them apart. Enjoy!

Those cookies look oh so gooey! I can relate to hubbies typical reaction. Mine doesn't have a sweet tooth so if he compliments something I bake I know I've accomplished something...
OMG, just made these and I think I died and went to heaven - first eating the batter, then eating the cookie itself! Thanks for posting this amazing recipe!

Wow. I am very impressed at this simple yet creative deliciousness. Bring on the Twix!! :) YUM!
That's my girl!!! Love, Mom
Oh my goodness - these just reminded me of these cookies I used to make with my friends growing up. We'd make a basic cookie recipe, and then stick a whole rollo (remember rollos?!) in the middle. I imagine these taste very similar to those!
These look like just like melt-in-your-mouth goodness. What a great combination of flavors.
Twix is one of my husband's favorite candies and I'm sure he'd go crazy for these too. I love the new take on chocolate chip cookies!
OH my word, candy in cookies?! You know those are just calling my name. They look soooo good. I LOVE twix and I LOVE cookies so what better than chunky twix cookies?! :)
gorgeous cookies!! i love the pictures on your blog..so pretty.
These look amazing! I bet my husband would go nuts for them too. :)
You had me at twix. It looks great.
I just got some mini Twix bars and was thinking of turning them into cookies! I will have to try these!
Question: About how many Twix are in 2 cups of chopped up bits? I'd like to know how many to buy before I make these. Thanks!
Hi Gail, I buy two sleeves of the mini twix bars, which equals about 2 cups of chopped twix candy. I think there are about 12 mini bars in one sleeve.
So, I'm making these right now just waiting on my friend to come back with more Twix bars. I got 3 regular size bars (the ones you pick up as your cashing out at the store ;) and that only made a cup so I'm guessing that 3 more will get me to two cups.
6 Regular Twix Bars = 2 cups
I made these today - fantastic! only problem is I can't stop eating them. really really good!! thanks for posting - I will definitely pass it on!
These are AMAZING. I put dark chocolate chips (the intense stuff - gharadelli 60%) and made them extra awesome.
Thanks for sharing this recipe! I've been looking for a recipe just like this to make for my sister-in-law's upcoming birthday. Twixes are her favorite candy bar. Thank you!
I just came across your blog and I love it, especially the pictures!! These cookies are such a good idea. I love Twix bars :)
I just made these cookies today after seeing the recipe months ago, and I have to say they were amazing. I made two batches and I can't wait to share them with my family and people at work. They'll love the melted caramel inside, makes the cookies so good :D
I'm so glad you enjoyed them! They're a favorite in our house:)
OH MY HECK!!!! I'm speechless!
Hey! These look delicious. I hope you don't mind me using this recipe but subbing the twix with heath. I linked back to your blog :) Thanks!
I'm so excited that I have to write it in caps:
THESE ARE AWESOME !
I made them today, and I'm glad that I have to leave for work soon or I'd probably eat the entire batch myself.
I don't know where I've been for the last 4 months but I'm sorry I didn't make these sooner! Thank you Thank you Thank you !
Just found you on foodgawker. Awesome blog! I just ran out to get twix and I'll be making these this afternoon!
Thank you so much for this! These are great cookies, but I noticed mine were a bit hard (I like soft, chewy cookies). Maybe I would lower the temperature a bit to get them like that, or maybe it's my oven I'm not sure. but I really do appreciate you posting this! <3
Hi Christina,
If your cookies are turning out harder than you like, I would try baking for less time. These are definitely chewy cookies, not hard, and everyone's oven bakes differently. It might take some experimentation to get the perfect consistency using your oven, but the results are worth it:) Also, I like to use an oven thermometer to check my oven accuracy ;) I hope this helps!

Just made these today! They are SOOOOO delicious!!! I love the consistency of the the dough- so moist. Thank you for the recipe- we love it!
I saw this recipe featured at YourHomeBasedMom and had to let you know they are amazing. Thanks for the great find.
These look jaw-dropping good! I have made the Cook's Illustrated chocolate chip cookies. Chocolate chip cookies are my husband's favorite. Like you, I think they are boring. This looks like a great change up I will have to try.
By the way, you have a beautiful blog!
Just made these for a cookie swap, and they turned out amazing! They didn't look exactly like yours, I figure its because I made them immediately instead of refrigerating them overnight. Thanks for the recipe!!!
i just made these! still waiting for them to cool down but they look and smell amazing :) fam members that have already eaten say they are great though, thanks for the recipe!
Hey based on a friend who made them i modified it for my oven I made them at 300 degrees to avoid overbaking and used only 4 bars (because my hubby isnt a huge chocolate fan... crazy i know) and they turned out beautiful.
These are amazing. I've made them twice now. I've noticed my oven also seems to cook them much faster, so I've found that if I cook them at 325 for 10 minutes or at 300 for around 15, they turn out perfect.
Hi Brittney! So glad you enjoy them. :) Yes, everyone's oven bakes differently, so it's always good to adjust things as needed. Thanks for letting me know how they turned out for you! :)
I dreamt about making these last night and never new they actually existed! I have to try them now!
i made these with my leftover halloween candy and they are delicious! thank you for sharing.
