Raspberry White Chocolate Kolache

When I first heard of Kolache I thought, “Say whatey?” A few weeks ago I had never even heard of this yummy treat, but since joining the fun of the Clickin Moms 3rd Annual Scavenger Hunt, I’ve been introduced to a new favorite. Also spelled Kolacky, this Czech treat is a type of pastry that holds a dollop of fruit rimmed by a puffy pillow of supple dough.

I’ve been slowly but surely making my way through the scavenger hunt list, and I thought that this item was a perfect way to kill two birds with one stone.  My poor blog has been a bit neglected of late, I’ve been entrenched in the scavenger hunt you know – and my family is starting to think I’m a tad crazy with the lengths I will go to cross something off my list .Smile

So while making these pastries did cross an item off my list, it also allowed me to share this deliciousness with you too.  These were definitely VERY tasty. I filled mine with raspberry jam and white chocolate chips, but there are so many other possibilities too.  PB&J and lemon curd are two that come to mind…hmmm…I may have to try that next.  Well, I’m off – I’ve got a list to get through before the 31st. Wish me luck!

Raspberry White Chocolate Kolache
(adapted from Allrecipes)
  • 3 ounces cream cheese
  • 1/2 cup butter, softened
  • 1 cup all-purpose flour
  • 1/2 cup any flavor fruit jam
  • 1/3 cup confectioners' sugar for decoration
  1. Mix cream cheese and butter until smooth. Add flour slowly until well blended. Shape into a ball and chill overnight or for several hours.
  2. Preheat oven to 350 degrees F (180 degrees C). Roll dough out 1/8 inch thick on a floured pastry board. Cut into 2 1/2 inch squares and place 1/2 tsp (approx) of jam or preserves. Overlap opposite corners and pinch together. Place on ungreased cookie sheets.
  3. Bake for 10 to 12 minutes in the preheated oven. Cool. Sprinkle lightly with confectioner's sugar.

My boyfriend is part Czech and I remember him telling me a story about when he brought in Kolaches to elementary school. Like you, my reaction was "say whatey?!" I'm really excited to test these out, I think we'll both enjoy them way too much!

Jess, these are definitely tasty. I think a traditional Kolache uses yeast in the dough, but I like how simple this recipe was. Since I've never had one made with a yeast dough, I thought these were great:)

In Macedonian, "kolachi" means cookies. :) And your kolachi are beautiful!!

Amber, these look wonderful. Growing up on the South Side of Chicago, there were many European varieties of ethnic foods and I loved them all but kolaches were pretty far up the list :-). Buzzed this and am sooooo printing it out :-D

Amber - These look DELISH! In Texas, we get sausage and cheese kolaches: soft dogh with smoked sausage and melty cheese inside. So good! Fruit and cream cheese area also very popular. I'm pinning this!

We have a "Kolache Kitchen" in town that sells only kolaches, both sweet and savory. These look really good, with the white chocolate and jam filling. :)

Yum - nice sounding recipe with the white chocolate added. My sister-in-law is Czech and I love her wonderful kolaches - mine never seem to taste like hers - maybe its in the genes :)

This looks amazing..I grow up eating these especially in Christmas time..on my language we would say Kolchi (but written kolaci), I am not Czech but very close country with similar cuisine..Amber you did incredible job!! Congrats on top 9!!

I'm Czech and I love our kolache :D Yours look wonderful, however they are quite different from what it's known under this name in the Czech Republic - here we make from yeast dough using fresh yeast and the filling is usually plum butter or ground walnuts, apple butter, quark cheese etc. and they're almost always sprinkled with streusel/crumb. Anyway, I bet these are delicious as well :)
