Chunky Twix Cookies


A little known fact about me, is that I have the tendency to get bored with making chocolate chip cookies. I am forever thinking of different ways to add a new twist to the faithful chocolate chip cookie.  I had great success with my Malted Milk Ball Chewies, and liked the malt ball candy substitution so well that I began to wonder about other candy cookie possibilities.

My brain train quickly came to a halt at the glorious Twix. Why not chop up Twix bars, throw them in, and see what happens?  Admittedly, it's sorta like putting cookies INTO cookies, but who says you can't do that?

The result was completely awesome, with the development of my husband's new FAVORITE cookie.  After picking up one of the freshly baked wonders, still warm from the oven, he took a tentative bite, not expecting anything too wondrous.  Then the next words from his mouth were, "These are freakin' AWESOME!"

Coming from my husband, who's usual response to a dish he likes is an abbreviated grunt and maybe a nod of his head, this was high praise indeed.  For the dough base I adapted my favorite chocolate chip recipe from Baking Illustrated. These cookies are great out of the oven and still taste good the next day. They can be baked immediately, or if you allow the dough to rest overnight in the refrigerator they develop an even deeper flavor. They are dense, thick and chewy, with a little crispness on the edges.  Yum!
Chunky Twix Cookies

Chunky Twix Cookies
Yield: 24 cookies    Printable Recipe

2 cups plus 2 tbsp all-purpose flour
1/2 tsp. baking soda
1/2 tsp. salt
12 tbsp. unsalted butter, melted and cooled until warm
1 cup packed brown sugar
1/2 cup granulated sugar
1 large egg plus 1 egg yolk
2 tsp. vanilla extract
2 cups coarsely chopped Twix bars

Preheat oven 325°. Coarsely chop the Twix bars (about 1/4-inch chunks).  I like to cut each bar in half lengthwise, and then make several cuts width ways to make even blocks.  In a medium bowl, whisk together the flour, baking soda and salt; set aside. In the bowl of an electric mixer, mix butter and sugars until thoroughly combined. Beat in egg, yolk, and vanilla until combined. Add dry ingredients to the sugar mixture and beat at low-speed just until combined. Gently stir in the Twix chunks.

Roll 1/4 cup of dough into a ball, place formed dough onto cookie sheet, leaving ample room between each ball. Bake until cookies are light golden brown and outer edges start to harden yet centers are still soft and puffy (about 15-18 minutes). Do not overbake.

Allow the cookies to cool completely on the baking sheet. Since the caramel from the Twix can make the cookies stick a little, I use an offset spatula to slide under the cookies without breaking them apart.  Enjoy!

  6. You could be my next bff! I think chocolate chip cookies are overrated and I am always looking for a twist to them. When my husband asks me to make chocolate chip cookies I usually answer the same way "but they are boring!". I need need need to try these ones. Thanks for sharing the recipe

  30. Oh my goodness - these just reminded me of these cookies I used to make with my friends growing up. We'd make a basic cookie recipe, and then stick a whole rollo (remember rollos?!) in the middle. I imagine these taste very similar to those!

  39. Hi Gail, I buy two sleeves of the mini twix bars, which equals about 2 cups of chopped twix candy. I think there are about 12 mini bars in one sleeve.

  40. So, I'm making these right now just waiting on my friend to come back with more Twix bars. I got 3 regular size bars (the ones you pick up as your cashing out at the store ;) and that only made a cup so I'm guessing that 3 more will get me to two cups.

  51. Thank you so much for this! These are great cookies, but I noticed mine were a bit hard (I like soft, chewy cookies). Maybe I would lower the temperature a bit to get them like that, or maybe it's my oven I'm not sure. but I really do appreciate you posting this! <3

    If your cookies are turning out harder than you like, I would try baking for less time. These are definitely chewy cookies, not hard, and everyone's oven bakes differently. It might take some experimentation to get the perfect consistency using your oven, but the results are worth it:) Also, I like to use an oven thermometer to check my oven accuracy ;) I hope this helps!

  55. These look jaw-dropping good! I have made the Cook's Illustrated chocolate chip cookies. Chocolate chip cookies are my husband's favorite. Like you, I think they are boring. This looks like a great change up I will have to try.

  58. Hey based on a friend who made them i modified it for my oven I made them at 300 degrees to avoid overbaking and used only 4 bars (because my hubby isnt a huge chocolate fan... crazy i know) and they turned out beautiful.

  59. These are amazing. I've made them twice now. I've noticed my oven also seems to cook them much faster, so I've found that if I cook them at 325 for 10 minutes or at 300 for around 15, they turn out perfect.
